The term literally means ‘twig bean’. It also refers to the young soybeans harvested with their twigs. Edamame beans are referred by the United States Department of Agriculture as “a soybean that can be eaten fresh and are best known as a snack with a nutritional punch.” It is a great source of carbohydrates, dietary fiber, fatty acids, protein, micronutrients, vitamin K and folic acid. Compared to other types of soybean, edamame beans have higher levels of protein, abscisic acid and sucrose. These beans are usually found in Japan, China and Hawaii.
